Autumn Caesar Roasted Squash Pecans (Print)

01 - 1 small butternut squash, peeled, seeded, and cut into 1/2-inch cubes
02 - 1 tablespoon olive oil

06 - 2 cups baby kale or arugula

12 - 1/2 cup mayonnaise
13 - 2 tablespoons freshly squeezed lemon juice
14 - 1 teaspoon Dijon mustard
15 - 2 teaspoons Worcestershire sauce
16 - 2 cloves garlic, finely minced
17 - 1/4 cup grated Parmesan cheese
18 - Salt and pepper, to taste

# Method:

01 - Preheat oven to 400°F.
02 - Toss butternut squash cubes with olive oil, salt, and black pepper. Arrange evenly on a baking sheet and roast for 25 to 30 minutes, turning halfway, until golden and tender. Allow to cool slightly after roasting.
03 - Combine bread cubes with olive oil and minced garlic. Spread on a separate baking sheet and bake for 10 to 12 minutes until crisp and golden, stirring once during baking.
04 - Toast pecan halves in a dry skillet over medium heat for 3 to 4 minutes, stirring often, until fragrant and lightly browned. Remove from heat and cool.
05 - In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, finely minced garlic, grated Parmesan, and a pinch of salt and pepper. Adjust seasoning to taste.
06 - In a large salad bowl, combine chopped romaine, baby kale or arugula, roasted butternut squash, toasted pecans, and prepared croutons.
07 - Drizzle Caesar dressing over salad ingredients and toss gently until evenly coated.
08 - Top with shaved Parmesan cheese. Serve immediately.
