→ Muffin Base & Topping

12 - 2 tubes (8 ounces each) refrigerated biscuit dough or homemade biscuit dough
13 - 1 cup shredded cheddar cheese
14 - 1/4 cup grated Parmesan cheese
15 - 2 tablespoons chopped fresh parsley (optional, for garnish)

# Method:

01 - Preheat oven to 375°F (190°C). Grease a standard 12-cup muffin tin or line with paper liners.
02 - Melt unsalted butter in a large skillet over medium heat. Add onion and minced garlic; cook until fragrant and translucent, about 2 to 3 minutes.
03 - Stir in all-purpose flour and cook for 1 minute. Gradually whisk in whole milk and chicken broth. Continue stirring constantly until mixture thickens, about 2 to 3 minutes.
04 - Add cooked chicken, mixed vegetables, dried thyme, salt, and freshly ground black pepper. Combine thoroughly and simmer for 2 to 3 minutes. Remove from heat and cool slightly.
05 - Separate biscuit dough into 12 equal pieces. Flatten and press each into the bottom and up the sides of each muffin cup, forming a shell.
06 - Spoon approximately 2 tablespoons of chicken mixture into each muffin shell.
07 - Sprinkle shredded cheddar cheese evenly over each muffin. Top with grated Parmesan cheese. Bake for 20 to 25 minutes, until biscuits are golden brown and cheese is melted and bubbly.
08 - Allow muffins to cool for 5 minutes before removing from the pan. Garnish with chopped fresh parsley if desired.
