20 - 1/4 cup unsalted butter
21 - 1/2 cup sour cream
22 - 1 1/2 teaspoons salt
23 - 1/2 teaspoon black pepper

# Method:

01 - Preheat oven to 350°F. Line a baking sheet with parchment paper or lightly grease a loaf pan.
02 - Combine ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, eggs, milk, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, and thyme in a large mixing bowl. Blend until just combined without overworking.
03 - Shape mixture gently into a loaf on the prepared baking sheet or press evenly into the loaf pan.
04 - In a small bowl, mix ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Spread half the glaze evenly over the meatloaf.
05 - Bake for 40 minutes. Remove from oven, spread remaining glaze over the top, and continue baking for an additional 20 to 25 minutes, or until the center registers 160°F.
06 - During meatloaf baking, place potatoes in a large pot and cover with cold water. Add 1 teaspoon salt, bring to a boil, reduce to simmer, and cook until very tender, about 18 to 20 minutes.
07 - Drain potatoes thoroughly and return to the pot. Add warmed milk, butter, sour cream, salt, and pepper. Mash until smooth and creamy.
08 - Allow meatloaf to rest for 10 minutes before slicing. Plate meatloaf with a generous serving of mashed potatoes.
