# Components:

01 - 6 bone-in, skin-on chicken thighs (about 2 pounds)
02 - 2 tablespoons olive oil

14 - 1 pound baby potatoes, halved
15 - 1 cup cherry tomatoes
16 - 2 cups fresh spinach leaves

# Method:

01 - Pat chicken thighs dry and season with garlic powder, Italian seasoning, salt, and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down and cook for 5 to 6 minutes until the skin is golden and crisp. Flip the thighs and cook an additional 3 minutes. Transfer the chicken to a plate and set aside.
02 - In the same skillet, arrange halved baby potatoes cut-side down. Sauté for 8 to 10 minutes, stirring occasionally, until potatoes are tender and deeply golden.
03 - Lower heat to medium. Add butter and minced garlic; sauté for about 30 seconds until aromatic. Pour in the heavy cream, stirring to deglaze the skillet. Incorporate grated Parmesan, lemon juice, thyme, and red pepper flakes. Simmer for 2 to 3 minutes until slightly thickened.
04 - Nestle the reserved chicken thighs among the potatoes in the skillet. Scatter cherry tomatoes around the pan. Simmer together for 5 to 7 minutes, or until chicken is cooked through to an internal temperature of 165°F and tomatoes begin to burst.
05 - Stir in fresh spinach leaves, allowing them to wilt for about 1 minute. Taste and adjust seasoning as needed. Top with chopped parsley and additional Parmesan before serving immediately.
