# Method:

01 - Pat the chicken thighs dry and season with Italian seasoning, garlic powder, salt, and freshly ground black pepper. Heat olive oil in a large, deep skillet over medium-high heat. Place chicken skin-side down and sear for 6 to 8 minutes until the skin is golden and crisp. Flip the thighs and cook an additional 3 minutes. Transfer chicken to a plate.
02 - In the same skillet, add diced onion and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
03 - Add long-grain white rice to the skillet, stirring to coat in the aromatics for 1 minute. Pour in chicken broth and heavy cream. Mix in sun-dried tomatoes, dried oregano, basil, and red pepper flakes. Bring mixture to a gentle simmer while stirring occasionally.
04 - Return chicken thighs, skin-side up, to the skillet, arranging them into the rice mixture. Cover with a lid and reduce heat to low. Simmer for 20 to 25 minutes, until the rice is tender and the chicken reaches an internal temperature of 165°F.
05 - Remove the lid and add fresh spinach. Stir until wilted, about 1 minute. Sprinkle with grated Parmesan cheese and chopped parsley.
