01 - Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool.
02 - Wash and prepare the zucchini, bell pepper, cherry tomatoes, cucumber, carrots, and red onion by dicing, slicing, or halving as appropriate.
03 - In a large bowl, whisk together olive oil, lemon juice or vinegar, Dijon mustard, minced garlic, honey or maple syrup, salt, and black pepper until well emulsified.
