03 - 4 medium radishes

→ Garnish & Assembly

04 - Fresh parsley or dill sprigs (optional)
05 - 1 small carrot (optional)

# Method:

01 - Thoroughly wash and dry all vegetables and fruit.
02 - Cut cucumbers into thin, oval-shaped slices by slicing on a bias.
03 - Cut radishes into thin rounds.
04 - Lay cucumber slices on a large serving platter in overlapping rows to form a broad, fanned shape resembling the tail.
05 - Place clusters of blue grapes evenly atop the cucumber slices to simulate eye spots.
06 - Position a radish slice at the center of each grape cluster to mimic peacock eye patterns.
07 - Use thin slices or strips of carrot to form a small beak and feet shapes at the narrow end of the cucumber fan.
08 - Decorate the base of the fan with fresh parsley or dill sprigs to suggest feathers, if desired.
09 - Serve immediately or cover and refrigerate for up to two hours prior to serving to maintain freshness.

# Expert Advice:

01 -
  • It looks absolutely stunning but takes barely twenty minutes, which means you can feel impressive without the stress.
  • Everything is raw and fresh, so it's naturally vegan, gluten-free, and honest—no weird ingredients hiding in the background.
02 -
  • Assemble this as close to serving time as possible, because even a couple of hours in the fridge will start to soften those crisp cucumber edges.
  • A sharp knife is the actual secret—dull blades will bruise everything and ruin the whole effect.
03 -
  • Keep your platter chilled in the fridge before assembling so everything stays crisp for as long as possible.
  • Bias-cut those cucumbers at a consistent angle, or the fan won't look as intentional and beautiful.
