# Method:
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the shredded cooked chicken, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to heat through for 2-3 minutes. Remove from heat and set aside to cool slightly.
- In a medium bowl, whisk together 1/3 cup creamy peanut butter, 2 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon rice vinegar, 1 tablespoon lime juice, 1 teaspoon sesame oil, minced garlic, and grated ginger. Gradually add warm water, 1 tablespoon at a time, until the sauce achieves a smooth and pourable consistency.
- In a large bowl, combine 1 cup shredded red cabbage, 1 cup shredded carrots, 1/2 thinly sliced red bell pepper, 1/4 cup thinly sliced scallions, 1/4 cup chopped fresh cilantro, and 1/4 cup roughly chopped roasted peanuts.
- Lay out the 4 large flour tortillas or wraps. Distribute a generous spoonful of the prepared peanut sauce down the center of each tortilla. Top with the warmed chicken mixture and the combined salad ingredients. Drizzle additional peanut sauce over the fillings.
- Fold in the sides of each tortilla and then roll up tightly to enclose the filling. Slice the wraps in half if desired. Serve immediately with lime wedges.
