# Method:
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat softened butter and sugar until light and fluffy, about 2 minutes.
- Incorporate the egg and vanilla extract, mixing until fully combined.
- Gradually blend in the dry ingredients until a smooth dough forms.
- Divide dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- On a lightly floured surface, roll dough to 1/4-inch thickness. Use a mitten-shaped cookie cutter to cut out cookies.
- Place cookies 1 inch apart on prepared baking sheets.
- Bake for 10 to 12 minutes until edges are just golden. Cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
- Whisk powdered sugar, egg whites, and lemon juice on low speed until smooth and glossy. Tint with gel food coloring as desired.
- Use icing, sprinkles, and edible decorations to adorn cooled cookies. Allow icing to set fully before serving or displaying.
