01 - 8 slices whole wheat or white sandwich bread
→ Filling
02 - 4 oz cream cheese, softened
03 - 2 tbsp mayonnaise
04 - 1/4 red bell pepper, finely diced
05 - 1/4 yellow bell pepper, finely diced
06 - 1/4 cucumber, finely diced, seeds removed
07 - 1 small carrot, peeled and grated
08 - 2 tbsp chives or green onions, finely chopped
09 - Salt and freshly ground black pepper, to taste
→ Decoration
10 - 2 cherry tomatoes, sliced
11 - 2 tbsp pomegranate seeds
12 - Fresh basil or parsley leaves
# Method:
01 - Using a star-shaped cookie cutter, cut a star from each bread slice and reserve the scraps.
02 - In a mixing bowl, combine cream cheese and mayonnaise until smooth, then stir in diced red and yellow bell peppers, cucumber, grated carrot, and chopped chives. Season with salt and pepper.
03 - Spread the vegetable cream cheese mixture evenly onto half of the star-shaped bread pieces.
04 - Place the remaining star-shaped bread slices on top to form sandwiches.
05 - Gently press sliced cherry tomatoes, pomegranate seeds, and fresh herbs onto the top of each sandwich to resemble jewels.
06 - Arrange sandwiches on a platter and serve immediately or cover and refrigerate for up to 2 hours before serving.
